Pestos recipes
Basil pesto:
2 Handfuls of fresh basil leaves
3 Tb Pine nuts
3 Tb Grated Parmesan
Salt and freshly ground black pepper - to taste
1 tsp Crushed garlic
1/2 cup Olive oil
Blend together in a pestle and mortal or using a hand held blender.
Add further olive oil for desired consistency.
Pepperdew pesto:
165g Drained pepperdews
230g Smooth cream cheese
4/5 Tb Olive oil
1 tsp Crushed garlic
Salt and freshly ground black pepper - to taste
Blend together in a pestle and mortal or using a hand held blender.
Artichoke pesto:
6 Artichokes - drained from a tin
3 Tb Pine nuts
1 level Tb Lemon zest
1 tsp Crushed garlic
Salt and freshly ground black pepper to taste
Blend together in a pestle and mortal or using a hand held blender.
Add further olive oil for desired consistency.
